First time I had this simple drink, was while we stayed at the Journey Inn in Hyde Park, NY a couple of weeks ago. The lovely Diane and Michelle prepared it from local honeydew and honey, blended with chopped fresh mint from their garden and garnished with flowers. Now I'm spending a couple of weeks in Varna, Bulgaria, where melons are in abundance and the mint is growing right in my parents garden, so I'm creating my own variations. My favorite so far is adding a peach to the heavenly purée. It's adding the perfect blend of summer sweetness to my lazy afternoons. The recipe is very simple: melon, honey to taste, 3-4 ice-cubes and a few fresh leaves of mint are pureed in a blender together and poured into your favorite glass. Find a nice shade and drink away!
